Tritada

Ingredients:

Tritada

  • 2 pounds pork, cut into 1 1/2-inch pieces
  • 1/4 cup vinegar
  • Salt and pepper to taste
  • 1 cup Primo beer (or any other kind of beer)
  • 1 tablespoon vegetable oil
  • 1 clove garlic, minced
  • 1 onion, chopped
  • 1 green pepper, sliced into strips
  • 2 tomatoes, sliced
  • 2 tablespoons tomato sauce
  • 2 tablespoons soy sauce
  • 2 medium sized potatoes, quartered

Directions:

  1. In a saucepot, season pork with vinegar, salt, and pepper; add beer.
  2. Bring to a boil, reduce heat and simmer until meat is tender and the sauce is thick; set aside.
  3. Heat oil in a large saucepot, sauté garlic, onion, and green pepper.
  4. Add tomato sauce, soy sauce, and potatoes.
  5. Cover and simmer until potatoes are tender.
  6. Add meat mixture to potato mixture, simmer for a few minutes and thicken with a cornstarch slurry if desired.

Makes 6 servings.
