Tea Sandwiches

Tea Sandwiches

  • 1 medium cucumber, pared, seeded, and finely chopped
  • Salt
  • 1/2 pkg (8 oz size) cream cheese, softened
  • 1 tablespoon butter, softened
  • Dash of onion salt
  • Dash of beau monde seasoning
  • 16 rounds of bread, 2 1/2-inches in diameter
  • 1 small green bell pepper, minced
  • Fresh dill sprigs


  1. Add salt to cucumber and let stand for several minutes.
  2. Squeeze cucumber in a cloth to remove excess liquid.
  3. In a bowl, combine cream cheese, butter, seasonings, and cucumber; mix well.
  4. Top rounds with cucumber mixture; place green pepper around edges.
  5. Top with sprigs of fresh dill.

Makes 16 tea sandwiches.
