Sweet Mini Pepper Salad

Ingredients:

Sweet Mini Pepper Salad

  • 2 cups sweet mini peppers, cut into long strips (red, yellow & orange colors)
  • 1 medium cucumber, peeled, seeded and sliced (about 1 cup)
  • 1 small red onion, thinly sliced (about ½ cup)
  • 10 pitted calamata olives, halved
  • Juice from one large lemon (about ¼ cup)
  • ½ teaspoon lemon zest
  • ¼ cup extra virgin olive oil
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon pepper
  • ½ cup feta cheese

Directions:

  1. Put aside feta cheese and mix the remaining ingredients in a large salad bowl.
  2. Gently fold in feta cheese prior to serving.
  3. The salad can be served right away or allowed to marinate for 2 to 4 hours before serving.

Makes 4 to 6 servings.
