Star Fruit Tartlets

Ingredients:

Star Fruit Tartlets

  • 6 homemade or store-bought prebaked mini tart shells (available at some supermarkets and specialty stores)
  • 4 ounces low-fat cream cheese
  • 1/4 cup sugar
  • 2 teaspoons flour
  • 1/2 egg, slightly beaten
  • 1 teaspoon milk or half and half cream
  • 1 teaspoon vanilla
  • 1 small star fruit cut into 6 1/2-inch slices, seeds removed

Directions:

  1. Preheat oven to 425°F.
  2. In bowl of an electric mixer, beat together cream cheese, sugar and flour until smooth.
  3. Add beaten egg, cream and vanilla; mix well.
  4. Scoop about one tablespoon of filling into each tart shell.
  5. Don't overfill.
  6. Place a star fruit slice on top filling of each tartlet; pushing down gently until it sinks in a bit.
  7. Bake for 5-6 minutes, then lower heat to 250°F; bake for 7-8 more minutes or until done.
  8. Remove from oven and let cool.
  9. Refrigerate until chilled.

Makes 6 servings.
