Spinach Salad with Dried Cranberries

Ingredients:

Spinach Salad with Dried Cranberries

  • 1 tablespoon butter
  • 3/4 cup blanched slivered almonds
  • 2 pounds fresh spinach, rinsed and torn into bite-sizes pieces
  • 1 cup dried cranberries
  • 1/2 pound bacon, chopped and fried until crisp
  • 3 hard-cooked eggs, chopped

Dressing:

  • 2 tablespoons toasted sesame seeds
  • 1 tablespoon poppy seeds
  • 1/2 cup white sugar
  • 1 teaspoon minced onion
  • 1/4 cup white wine vinegar
  • 1/4 cup cider vinegar
  • 1/2 cup vegetable oil

Directions:

  1. In a small skillet, melt butter and sauté the almonds in the butter until lightly toasted; let cool.
  2. In a small bowl, combine dressing ingredients.
  3. Just before serving, toss spinach with dressing.
  4. Top with almonds, cranberries, bacon bits, and eggs.

Makes 6 servings.
