Spare Ribs Soup

Ingredients:

Spare Rib Soup

  • 2 pounds local pork spare ribs, cut into 2 to 3-inch pieces
  • 1 tablespoon sliced ginger
  • 5 pieces star anise
  • 8 cups water
  • 3 beef bouillon cubes
  • 1 cup raw shelled peanuts
  • 1/2 cup sliced shitake mushrooms
  • 1 bunch bok choy

Directions:

  1. In a large pot, add pork, ginger, star anise, and water.
  2. Bring to a boil and simmer for 30 minutes.
  3. Remove star anise and skim excess fat.
  4. Add bouillon cubes, peanuts, and mushrooms; simmer for 30 minutes more.
  5. Add bok choy and cook until soft.

Serves 6.

Followed the recipe as is and it turned out sooo good. So easy to make, just how I like it. Will definitely be making it again.

Heard star anise has very strong distinct flavor. When recipe says 5 pieces of star anise, do they mean 5 whole star anise? Each star anise seed has 5+ seeds (it can range 5-11 seeds). Other sources says "can substitute can use common anise or Chinese five-spice powder. For each star anise called for in the recipe, use 3/4 teaspoon crushed anise seeds or 1/2 teaspoon Chinese five-spice powder. Fennel seeds can also be used but won't have as strong of a licorice taste. If a liquid will work in the recipe, 1 tablespoon of anisette, Pernod, or Sambuca can be substituted for each star anise, or 1/4 to 1/2 teaspoon anise extract."

Super yummy and easy to make. Perfect for cold winter weather! Recommend seasoning the ribs with a little garlic salt before cooking. Also added a small scoop of brown sugar to the pot of soup after everything was cooked and liked how it added another layer of flavor. This will definitely be a repeat/go-to recipe!!!
