Roasted Sausages with White Beans

Ingredients:

Roasted Sausages with White Beans

  • 1 pound sweet Italian sausage, cut into 2 to 3-inch pieces
  • 1 pound chorizo sausage, cut into 2 to 3-inch pieces
  • 3 pints cherry tomatoes
  • 1 large yellow onion, cut into 1 to 2-inch chunks
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 2 teaspoons dried thyme leaves
  • 2 whole bay leaves
  • 3 cans (15 ounce size) white beans (such as northern beans), drained with 1/2 cup liquid reserved

Directions:

  1. Adjust oven rack to lowest position in oven.
  2. Place all ingredients except beans and reserved liquid in a large roasting pan.
  3. Roast at 425°F until sausages are browned and the tomatoes have reduced to a thick sauce, about 45 minutes.
  4. Remove from oven, stir in beans and reserved liquid; continue cooking until heated through, about 10 minutes.
  5. Remove bay leaves before serving.

Makes 8 servings.
