Roast Turkey with Old Fashioned Stuffing

Ingredients:

Roast Turkey with Old Fashioned Stuffing

  • 12 to 14 lb turkey
  • Salt
  • 1 cup butter or margarine
  • 1 cup chopped celery
  • 1 1/2 cups chopped onions
  • 2 pkg (7 1/2 oz size) seasoned stuffing mix
  • 1 cup broth
  • 1 teaspoon salt
  • 1/4 teaspoon poultry seasoning
  • 1/4 teaspoon pepper
  • Salad oil

Directions:

  1. Rinse and drain turkey.
  2. Salt neck and body cavities lightly.
  3. In a large saucepan, melt butter.
  4. Lightly saute celery and onions.
  5. Stir in stuffing mix, broth, the 1 teaspoon salt, poultry seasoning, and pepper.
  6. Stuff turkey.
  7. Rub skin with oil.
  8. Roast at 325°F in an electric oven until meat thermometer registers 180°F, about 3 1/2 to 4 hours.
  9. Bake extra stuffing in a covered casserole for 30 to 45 minutes or until heated.

Makes 8 to 12 servings.

Gravy:

  1. For each cup of gravy, use 2 tablespoons drippings, 2 tablespoons flour, and 1 cup broth.
  2. Drain drippings from roasting pan, measure and return to pan.
  3. Blend in the flour, stirring and cooking just until mixture comes to the boil.
  4. Add broth, stirring constantly, cook until thickened.
  5. Season with salt and pepper.
