Ingredients:

Lemon Cheese Bars

  • 1 package (18 1/2 ounces) yellow cake mix
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 package (8 ounces) cream cheese, softened
  • 1/3 cup sugar
  • 1 teaspoon lemon juice

Directions:

  1. Preheat oven to 350°F.
  2. Combine cake mix, 1 egg, and the oil and mix until crumbly; reserve 1 cup and set it aside.
  3. Pat remaining mixture lightly into an ungreased 13 x 9x 2-inch pan.
  4. Bake for 15 minutes.
  5. Beat cream cheese, sugar, lemon juice, and the remaining egg until smooth; spread over baked layer.
  6. Sprinkle the reserved crumb mixture over the cream cheese layer; bake for 15 minutes.
  7. Cool and cut into bars.

Makes 24 bars.

Weird. Really wanted to like it, especially because it is so easy, but it’s just weird.
