Cinnamon Crumb Cake

Ingredients:

Cinnamon Crumb Cake

  • 4 cups flour
  • 2 cups sugar
  • 4 teaspoons baking powder
  • 1 1/2 cups butter or margarine
  • 1 1/4 cups milk
  • 2 eggs, beaten
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon ground cinnamon

Directions:

  1. Preheat electric oven to 350°F.
  2. Grease a 13 x 9 x 2-inch baking pan.
  3. In a bowl, combine flour, sugar, and baking powder.
  4. Using a pastry blender, cut in butter until mixture resembles coarse crumbs.
  5. Reserve 2 cups of the crumb mixture for topping.
  6. To the remaining crumb mixture, add milk, eggs, and vanilla.
  7. Beat well and pour into prepared pan.
  8. To the reserved crumb mixture, add cinnamon; sprinkle over batter.
  9. Bake for 40 to 45 minutes.

Makes 24 servings.
