Baseball Potluck Chocolate Tiramisu Cake

1 package (18.5 ounces) devil's food cake mix
1 package (8 ounces) cream cheese, softened
1/2 cup powdered sugar
1/2 cup sour cream
1/2 teaspoon rum extract
1 container (8 ounces) frozen whipped topping (such as Cool Whip), thawed
1/2 cup sugar
1/4 cup instant coffee granules
1/3 cup boiling water
1 bar (8 ounces) semi-sweet baking chocolate (such as Baker's)
Prepare cake mix according to package directions; cool. In a large bowl, whisk together the cream cheese and powdered sugar until smooth. Whisk in sour cream and rum extract. Fold in whipped topping with electric mixer. In a medium bowl, stir together sugar, coffee granules, and boiling water until dissolved; brush mixture over cooled cake. Spread cream cheese mixture over cake. Grate chocolate bar over cream cheese mixture and refrigerate. Makes 20 servings.
