Minute Chicken

Ingredients:

Minute Chicken

  • 3 pounds boneless, skinless chicken pieces
  • 3 tablespoons flour
  • 1/4 cup salad oil
  • 2 cloves garlic, crushed
  • 3/4 cup chopped green onions
  • 1/3 cup chopped Chinese parsley (cilantro)
  • 1 tablespoon sugar
  • 1/3 cup oyster sauce
  • 1/3 cup water
  • 1/4 teaspoon pepper

Directions:

  1. Cut chicken into bite-sized pieces.
  2. Coat with flour; let it stand for 10 minutes.
  3. In wok or skillet, heat oil and garlic until oil is sizzling.
  4. Add chicken and stir-fry until browned.
  5. Lower heat and add remaining ingredients.
  6. Garnish with additional Chinese parsley.

Makes 6 servings.

This is a simple recipe that I’ve been using for years. My hard copy of the recipe book is always turned to this recipe. The family always appreciates the dish at potluck dinners. Plus leftovers are awesome for Chinese tacos … make sure to load on the Chinese parsley!
