Ingredients:

Kahuku Farms Lilikoi Butter Butter-Mochi

  • 1 pound mochi flour
  • 2 1/2 cups sugar
  • 2 tablespoons baking powder
  • 5 local eggs
  • 1 1/2 cups cold whole milk, may substitute with 2%
  • 1 (12 ounce) can coconut milk
  • 1 teaspoons vanilla
  • 1 pound Kahuku Farms Lilikoi Butter, melted and cooled (available at Kahuku Farms)

Directions:

  1. Preheat oven to 350°F.
  2. Coat a 9" x 13" baking pan with non-stick cooking spray.
  3. In large bowl, mix dry ingredients.
  4. In another bowl, mix eggs, milk, coconut milk, and vanilla.
  5. Add egg mixture and lilikoi butter to dry ingredients and mix by hand until smooth.
  6. Pour mochi into pan and bake for 1 hour.
  7. Cool, cut and serve.

Makes 18 pieces.

Ok - update - tried making it by using just straight lilikoi puree vs the lilikoi butter and it did not come out the same. Ended up tasting sour, and almost like pumpkin mochi. Definitely have to use lilikoi butter.

Soooooooo yummy! Super easy to make, and so so so delicious. Next batch going to try using just straight lilikoi puree vs lilikoi butter. Hope it comes out the same!

I didn’t have a pound of lilikoi butter so I used what I had and added lilikoi purée just a splash. I had to bake it longer but came out so ono! It’s hard to get lilikoi butter here in Washington so next time I’ll have to make my own butter.
