Buko Salad

Ingredients:

Buko Salad – Fruit Salad

  • 4 cups young coconut, shredded
  • 3/4 cup sugar palm fruit (kaong), drained (can be found at Asian markets)
  • 12 ounces coconut gel, drained (can be found at Asian markets)
  • 2 (15-ounce) cans fruit cocktail, drained
  • 1 (8-ounce) can pineapple chunks, drained
  • 1 (14-ounce) can sweetened condensed milk
  • 3/4 cup evaporated milk

Directions:

  1. In a large bowl, combine coconut, sugar palm, pineapple, fruit cocktail and coconut gel.
  2. Gently stir ingredients together.
  3. Add sweetened condensed milk and evaporated milk.
  4. Mix until all ingredients are evenly distributed.
  5. Refrigerate for at least 4 hours or place in freezer for about 1 hour.

Makes 12 servings.
