Dill and Honey Mustard Baked Salmon

Ingredients:

Dill and Honey Mustard Baked Salmon

  • 1 pound salmon fillet
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 cup nonfat plain yogurt
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 2 teaspoons fresh dill, finely chopped (you may substitute with dried dill)

Directions:

  1. Position rack in upper third of oven and preheat electric oven to 400°F.
  2. Place salmon filet on foil lined baking sheet (skin side down).
  3. Sprinkle salt and pepper on salmon and set aside.
  4. Combine yogurt, lemon juice, garlic, honey, and mustard in a small bowl.
  5. Spread yogurt mixture all over salmon and sprinkle with the dill.
  6. Bake the salmon for 10-15 minutes until cooked through.
  7. Put the oven setting onto broil and cook salmon until golden brown (2-3 minutes), make sure to watch the salmon carefully to make sure it does not burn.
  8. Serve with your favorite starch or side dish.
