Chicken Salad

Ingredients:

Chicken Salad

  • 4 cups cooked and chopped chicken breasts
  • 1 cup chopped celery
  • 1 cup green grape halves
  • 1 cup chopped apple
  • 1 tablespoon minced Italian parsley
  • 1/2 teaspoon curry powder
  • 1 teaspoon salt
  • 1/2 cup mayonnaise
  • 1/2 cup plain non-fat yogurt
  • Lettuce leaves
  • 1/2 cup slivered almonds, toasted

Directions:

  1. In a bowl, combine chicken, celery, grapes, apple, parsley, curry powder and salt; mix well.
  2. Stir in mayonnaise and yogurt.
  3. Spoon onto lettuce-lined platter; sprinkle with almonds.

Makes 6 servings.
