Spanish Rice

Ingredients:

Spanish Rice

  • 2 slices bacon, chopped
  • 1/2 pound ground beef (optional)
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 2 cups canned whole tomatoes with liquid OR 1 1/2 cups tomato sauce
  • 3 cups cooked rice

Directions:

  1. Saute bacon, ground beef, onion, and green pepper; drain fat.
  2. Add salt, pepper, bay leaf, tomatoes or tomato sauce.
  3. Simmer for 5 to 10 minutes.
  4. Remove bay leaf.
  5. Stir in rice until heated through.

Makes 6 servings.
