Ingredients:
Simple, Ono, and Healthy Chicken Adobo
Try this delicious recipe from the Electric Kitchen!
2 lb boneless, skinless chicken breasts, cut into 2 inch pieces
1 onion, chopped
1/2 tablespoon whole black peppercorns
1 cup water
1/2 cup saltless soy sauce (available at Japanese grocery stores)
1/2 cup cider vinegar
2 bay leaves
7 cloves garlic, chopped
Directions:
In a large sauce pot, combine all ingredients.
Bring to a boil; lower to medium heat and simmer until liquid is almost completely evaporated.
Do not stir while simmering to prevent chicken pieces from falling apart.
Serve with brown rice.
Makes 6 servings.

This is the most perfect recipe for chicken adobo. Most authentic and best tasting adobo I have ever found. I shared it with my friends and family and they loved it too!
