Ingredients:

Simple, Ono, and Healthy Chicken Adobo

  • 2 lb boneless, skinless chicken breasts, cut into 2 inch pieces
  • 1 onion, chopped
  • 1/2 tablespoon whole black peppercorns
  • 1 cup water
  • 1/2 cup saltless soy sauce (available at Japanese grocery stores)
  • 1/2 cup cider vinegar
  • 2 bay leaves
  • 7 cloves garlic, chopped

Directions:

  1. In a large sauce pot, combine all ingredients.
  2. Bring to a boil; lower to medium heat and simmer until liquid is almost completely evaporated.
  3. Do not stir while simmering to prevent chicken pieces from falling apart.
  4. Serve with brown rice.

Makes 6 servings.

This is the most perfect recipe for chicken adobo. Most authentic and best tasting adobo I have ever found. I shared it with my friends and family and they loved it too!
