Seared Opah with Shiitake Mushroom Sauce

Ingredients:

Seared Opah with Shiitake Mushroom Sauce

  • 1 bunch leafy green vegetables (such as won bok or choy sum), steamed
  • 2 pounds opah fillets, cut 1/2 inch thick
  • Salt and pepper to taste
  • 10-12 dried shiitake mushrooms, soaked in 1 cup hot water for 5 minutes and thinly sliced (water will be used for broth as noted below)
  • 1 cup shiitake mushroom broth
  • 1/4 cup mirin
  • 1/4 cup water
  • 2 tablespoons butter
  • 2 tablespoons oyster sauce
  • 1 tablespoon honey
  • Olive oil to coat pan
  • 1-2 tablespoons cornstarch
  • 1/4 to 1/2 cup water

Directions:

Arrange prepared vegetables on platter; set aside. Season fish with salt and pepper. In medium sauté pan, heat olive oil and sear fish on both sides on medium high for 1-2 minutes on each side. Arrange fish on bed of vegetables. In same pan, keeping olive oil and fish drippings, add butter. Add sliced mushrooms and lightly brown. Add mirin and water; reduce for 1-2 minutes, stirring occasionally. Add mushroom broth, oyster sauce, and honey; reduce for 1-2 minutes, stirring occasionally. In a small bowl, mix cornstarch and water. Slowly add mixture to pan to thicken sauce. Pour thickened mushroom sauce over fish and vegetables and serve. Recipe makes 4 servings.
