Sari-Sari (Mixed Vegetable Dish)

Ingredients:

Sari-Sari (Mixed Vegetable Dish)

  • 1/4 lb whole shrimp
  • 1 tablespoon salad oil
  • 1 clove garlic, minced
  • 1 small onion, sliced
  • 1 large tomato, sliced
  • 1/2 lb crispy-skin roast pork, sliced
  • 1 tablespoon patis (clear fish sauce)
  • 1 teaspoon achuete (lipstick plant) powder
  • 1 quart hot water

Vegetables (use 4 to 5 of the following):

  • 1 cup cubed pumpkin
  • 1 cup sliced long beans
  • 1 cup sliced winged beans
  • 1 cup sliced white squash
  • 1 cup sliced okra
  • 1 cup sliced eggplant
  • 1 cup sliced sequa (sponge gourd)
  • 1/2 lb swamp cabbage, cut into 2-inch lengths
  • Salt to taste

Directions:

  1. Wash shrimp; leave shells on.
  2. In a large saucepot, heat oil.
  3. Add garlic, onion, and tomato; sauté for 1 minute.
  4. Add pork, patis, and shrimp; sauté for 2 minutes.
  5. Combine achuete powder and hot water; add to saucepot.
  6. Cover and bring to a boil.
  7. Add selected vegetables and cook each in order listed until just tender.
  8. Season to taste and serve immediately.

Makes 6 servings.
