Zucchini Pizzas

Zucchini Pizzas

  • 6 small zucchini, cut in half lengthwise and pat dry
  • 1 tablespoon olive oil
  • 1 clove garlic, finely minced
  • Salt and freshly ground black pepper, to taste
  • 1 cup marinara sauce, divided
  • 1½ cups shredded Mozzarella cheese
  • cup finely shredded Parmesan cheese
  • ½ cup mini pepperoni slices
  • 2 tablespoons chopped fresh oregano


  1. Heat oven to 400°F.
  2. Line a large baking pan with parchment paper.
  3. Place zucchini on baking pan, flat side up.
  4. In a small bowl, mix together olive oil and garlic; brush lightly on top of zucchini.
  5. Add salt and pepper to taste.
  6. Brush a heaping tablespoon of marinara sauce over each zucchini, leaving a small rim near edges uncoated.
  7. Sprinkle zucchini tops evenly with Mozzarella cheese, Parmesan cheese, then pepperoni.
  8. Bake 12-18 minutes, until desired doneness.
  9. Remove from oven; garnish with oregano.
  10. Serve warm.
