Wonderful Taste Chicken

  • 1 rotisserie roasted chicken
  • 3 tablespoons red Chinese vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon light brown sugar
  • 2 teaspoons chili paste with garlic
  • 1 1/2 teaspoons sherry
  • Dash of white pepper
  • 1 cup 1 1/2-inch green onion strips
  • 2/3 cup chopped dry roasted peanuts
  • 2 quarts shredded lettuce or mixed salad greens
  • 1/4 cup 1-inch Chinese parsley sprigs
  • 1 tablespoon toasted sesame seed


Remove the skin and bones from the rotisserie chicken, and cut meat into 1-inch squares. Combine vinegar, soy sauce, sesame oil, sugar, chili paste, sherry, and pepper. Pour over chicken and mix lightly; stir in green onion and 1/3 cup of the peanuts. Place lettuce or salad greens onto large serving platter; top with chicken. Sprinkle remaining peanuts, the parsley, and sesame seeds on top. Makes 6 to 8 servings.
