Vegetable Gratin

Vegetable Gratin

  • Olive oil spray
  • 2 zucchini
  • 3 yellow squash
  • 1 medium red or yellow onion
  • 9 large plum tomatoes
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 to 3 tablespoons oil and vinegar salad dressing


Preheat electric oven to 375°F. Spray a 13 x 9 x 2-inch baking pan with olive oil spray. Cut vegetables crosswise into 1/4-inch slices. In prepared pan, arrange vegetables alternately, overlapping slices. Spray vegetables lightly with olive oil spray. Season with salt, pepper, and garlic powder. Sprinkle with Parmesan cheese. Bake for 10 to 15 minutes. Remove from oven and brush with salad dressing. Makes 8 servings.
