Vanilla Scones

Ingredients:

Vanilla Scones

  • 2 eggs, slightly beaten
  • 1 tablespoon vanilla extract
  • 1/2 cup butter, melted
  • 1 cup milk
  • 1/2 cup sugar
  • 3 1/2 cups flour
  • 1/2 teaspoon salt
  • 2 tablespoons baking powder

Directions:

  1. Preheat electric oven to 350°F.
  2. Grease cookie sheets.
  3. In a bowl, combine eggs, vanilla, butter, milk, and sugar.
  4. Sift flour with salt and baking powder.
  5. Add to egg mixture and stir until just combined.
  6. Drop rounded tablespoonfuls of mixture onto cookie sheets.
  7. You may also sprinkle raw sugar or colored sugar on scones before baking.
  8. Bake for 15 to 20 minutes.

Makes 12 servings.

Variation: You may add fresh blueberries, dried cranberries, apricots, or chocolate chips to the batter, if desired.

Followed recipe, but they had a chewy consistency and came out more like muffins. Not very tasty.
