Tuscan Lemon Chicken

Ingredients:

Tuscan Lemon Chicken

  • 3 ½ pounds chicken breasts (boneless with skin on)
  • 2 teaspoons Kosher salt
  • 1/3 cup olive oil
  • 2 teaspoons lemon zest (about 2 lemons)
  • 1/3 cup lemon juice
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh rosemary leaves, minced
  • 1 teaspoon pepper

Directions:

  1. Sprinkle chicken with 1 teaspoon salt on each side, set aside.
  2. Combine olive oil, lemon zest, lemon juice, garlic, rosemary and pepper.
  3. Pour mixture over chicken making sure to evenly coat both sides.
  4. Cover chicken with plastic wrap and marinate in the refrigerator for 4-6 hours.
  5. Cook on a well greased grill until done (10-15 minutes on each side).
  6. Serve with your favorite starch.

Makes 7 servings.
