Turkey with Barbecue Spice Rub

Ingredients:

Turkey with Barbecue Spice Rub

  • 10 pound turkey
  • 1 bottle (1 ounce) paprika
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons ground cumin
  • 2 tablespoons chili powder
  • 2 tablespoons salt
  • 2 tablespoons freshly ground black pepper
  • 1 tablespoon ground red pepper (cayenne)

Directions:

  1. Rinse and drain turkey; pat dry with paper towels.
  2. In a small bowl, mix together remaining ingredients; rub evenly onto turkey and refrigerate for at least 1 hour.
  3. Roast in oven at 325°F for about 2 1/2 to 3 hours or until meat thermometer registers 180°F deep in the thigh-juices should be clear and not reddish pink when thigh muscle is pierced deeply.

Makes 6 servings.
