Trisha’s Baked Salmon

Ingredients:

Trisha’s Baked Salmon

  • Non-stick cooking spray
  • 1 (1 1/4 to 2 pound) center cut salmon fillet with or without skin
  • 1 tablespoon lemon pepper seasoning
  • 1 teaspoon of garlic powder or two cloves of fresh crushed garlic
  • 1/2 teaspoon of salt (or less)
  • 1 cup mayonnaise
  • 2 tablespoons of fresh dill, finely chopped or one teaspoon of dried dill
  • 1/2 cup of finely grated Parmesan cheese
  • Lemon wedges for garnish

Directions:

  1. Preheat oven to 400°F.
  2. Place large sheet of foil on baking sheet.
  3. Coat foil with non-stick cooking spray.
  4. Place salmon, skin side down, on prepared sheet.
  5. Sprinkle salmon with lemon pepper, garlic and salt.
  6. Rub seasonings into salmon flesh.
  7. Whisk together dill and mayonnaise in small bowl to blend.
  8. Spread surface of salmon with mayonnaise dill sauce.
  9. Cover completely.
  10. Sprinkle Parmesan cheese over sauce covered salmon.
  11. Bake salmon, uncovered, until just opaque in center, and golden brown on surface.
  12. Bake about 20 minutes, dependent on size of filet.
  13. Finish salmon under broiler for extra browning, if desired.
  14. Garnish with lemon wedges.
