Tostones (Refried Bananas)
- 3 plantains (cooking bananas)
- 1 teaspoon salt
- Salad oil for frying

Carefully remove peel from bananas. Cut bananas into 1/2-inch diagonal pieces and place in water to cover. Add salt. In a skillet, heat oil to 375°F. Drain banana pieces and fry until lightly browned. Drain on paper towels. Gently, but firmly, flatten pieces. Return to skillet and fry until golden brown on both sides; drain. Makes about 6 servings.
