Tomato Rubbed Bread

Ingredients:

Tomato-Rubbed Bread

  • 4 (1-inch thick) slices coarsely textured country-style bread
  • 1/4 cup extra virgin olive oil
  • 1 to 2 large cloves garlic, halved
  • 1 to 2 very ripe tomatoes, halved
  • Kosher salt

Directions:

  1. Brush both sides of bread with olive oil; toast or grill.
  2. Rub toasted bread with garlic and tomato.
  3. Lightly sprinkle with kosher salt and drizzle with remaining olive oil.
  4. Serve immediately.

Serves 4.
