Thai Mango and Green Papaya Salad

Ingredients:

Thai Mango and Green Papaya Salad

  • 2 ripe but firm mangos
  • 1 green papaya
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 carrot
  • 1 red onion
  • 1 jalapeno, finely chopped
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup roasted peanuts

Dressing:

  • 1/4 cup of calamansi lime
  • 1 tablespoon shoyu
  • 1 tablespoon sugar
  • 3 tablespoons peanut oil
  • 1/2 teaspoon sesame oil
  • 2 teaspoon patis (Filipino fish sauce; available in Asian section)
  • Salt and pepper to taste

Directions:

  1. Julienne first six ingredients and toss with minced jalapeno in a large bowl; set aside.
  2. In a small mixing bowl, combine all ingredients for the dressing except for salt and pepper.
  3. Whisk together until sugar is completely dissolved.
  4. Season with salt and pepper to taste.
  5. Add dressing to vegetables and toss gently.
  6. Top with mint and peanuts.
  7. Serve immediately.

Serves 4-6.
