Taro Crab Hash and Garlic Remoulade

Ingredients:

Taro Crab Hash and Garlic Remoulade

Remoulade:

  • 1/2 quart mayonnaise
  • 2 tablespoons minced garlic
  • 1/8 cup minced parsley
  • 1/8 cup sliced green onions
  • 1 tablespoon minced fresh basil
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh lemon juice
  • Salt, pepper, and garlic powder to taste
  • 3/4 quart sour cream

Hash:

  • 1/2 pound Russet potato, peeled
  • 2 pounds taro, steamed, cooled, grated using the largest holes on the grater
  • 1/2 cup diced caramelized onion
  • 1/4 cup finely chopped parsley
  • 1/4 cup thinly sliced green onion
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup lump crab meat, picked
  • 2 whole eggs
  • 1/4 cup panko
  • Salt and pepper, to taste
  • Olive oil, for sautéing

Directions:

  1. For remoulade, combine all ingredients except sour cream into a mixing bowl.
  2. Mix well.
  3. Gently fold in sour cream and adjust seasoning as needed.
  4. Chill until ready to serve.
  5. For hash, clean and peel potatoes.
  6. Using the large holes on your grater, grate potatoes.
  7. Place grated potato in a large bowl of cold water and let soak to remove excess starch.
  8. Drain well and combine with the rest of the ingredients, except oil.
  9. Fold gently together until evenly mixed.
  10. Do not over mix.
  11. Separate mixture into 3-ounce scoops.
  12. Over medium-high, coat a large sauté pan with olive oil.
  13. When oil is hot, place a scoop of the mixture into the pan, pressing lightly with a spatula to form a rustic style hash patty.
  14. Repeat until a few patties are in the pan but not over crowded.
  15. Cook until golden brown on both sides and moist in the center, about 2-4 minutes per side.
  16. Serve warm with a dollop of remoulade.

Makes about 10 crab cakes.
