Takikomi Gohan (for good health)

Ingredients:

Takikomi Gohan (for good health)

  • 2 cups uncooked rice
  • 1/4 low-sodium shoyu
  • 2 tablespoon mirin
  • 2 tablespoon dry dashi (Japanese fish stock)
  • 1 3/4 cup water
  • 3/4 cup dried shiitake (reconstituted), chopped
  • 3/4 cup carrots, julienned
  • 3/4 cup aburage (deep fried tofu), chopped into thin strips (available in Asian section)
  • 3/4 cup bamboo shoots, julienned

Directions:

  1. Wash and drain rice.
  2. Add rice and the rest of the ingredients into the rice cooker; stir to combine.
  3. Set rice cooker to white rice setting and cook.
  4. When cooked empty rice into a large bowl and mix before serving.

Makes 6 servings.
