Tabby's Terrific Pasta

  • 2 cups dried whole wheat pasta of your choice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 onion, chopped
  • 1 (28-ounce) can low-sodium diced tomatoes
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon dried parsley
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sugar
  • 2 fresh basil leaves, sliced
  • 2 cups mozzarella shredded cheese

  1. Bring a medium-sized pot of lightly salted water to boil.
  2. Add pasta and cook for 8-10 minutes or until al dente; drain.
  3. In a large saucepan, add oil and saute garlic and onions until onions are translucent on medium heat.
  4. Add tomatoes, oregano, parsley, black pepper, sugar and basil.
  5. Let it sit for 3-5 minutes, then reduce heat and let it simmer.
  6. Serve sauce on top of pasta and top with cheese.

Makes 4 servings.

Tip: When cooking with whole wheat pasta, use big, bold flavors that can stand on its own to balance off its nutty flavor, such as strong cheeses, roasted peppers, and hearty sauces.
