Sweet Potato Dessert

Ingredients:

Sweet Potato Dessert

  • Oil for frying
  • 2 medium sweet potatoes, peeled and cut into 1 1/2-inch cubes (about 3 cups)
  • 6 tablespoons brown sugar
  • 6 tablespoons Hawaiian honey
  • 1 1/2 tablespoon vegetable oil
  • Black sesame seeds to garnish

Directions:

  1. In a deep fryer, preheat oil to about 340°F.
  2. In a large pot, soak the potatoes in water for 10 minutes to leech out some of the starch; dry with a paper towel.
  3. Fry the sweet potatoes, occasionally stirring them so that they do not stick together or to the pan.
  4. To check if the potatoes are done, poke one piece with a fork or chopstick.
  5. If it goes through smoothly, they are done.
  6. Remove them from the oil, and place on paper towels to soak up excess oil; set aside.
  7. In a saucepan, add brown sugar, honey, and oil.
  8. Boil it until the sugar melts on medium low.
  9. Pour the hot syrup quickly on the fried sweet potatoes.
  10. Quickly mix them gently.
  11. Sprinkle sesame seeds for garnish.
