Supreme Chocolate Cake with Chocolate Frosting

Ingredients:

Supreme Chocolate Cake with Chocolate Frosting

  • 1 cup unsweetened cocoa
  • 2 cups boiling water
  • 2 3/4 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 2 1/2 cups sugar
  • 4 eggs
  • 1 1/2 teaspoons vanilla
  • Chocolate Frosting (see below)

Chocolate Frosting:

  • 1 cup heavy cream
  • 1 1/8 cups sugar
  • 1/2 cup butter
  • 5 squares (1 ounce each) unsweetened chocolate
  • 1 teaspoon vanilla

Directions:

Supreme Chocolate Cake:

  1. Preheat electric oven to 350°F.
  2. Grease a 13 x 9 x 2-inch pan or two 9-inch round baking pans.
  3. Dissolve cocoa in the boiling water.
  4. Sift flour with baking soda, baking powder, and salt.
  5. In large bowl of electric mixer, cream butter and sugar until light and fluffy.
  6. Add eggs, one at a time, beating well after each addition.
  7. Mix in vanilla.
  8. Add dry ingredients alternately with cocoa mixture, beating after each addition.
  9. Pour into prepared pan; bake for 25 to 30 minutes or until done.
  10. Cool and frost with Chocolate Frosting.

Makes 24 servings.

Chocolate Frosting:

  1. In a saucepan, combine cream and sugar; bring to a boil.
  2. Lower heat and simmer for 6 minutes.
  3. Remove from heat; add butter, chocolate, and vanilla, stir until chocolate is melted and mixture is smooth.
  4. Place saucepan over bowl of iced water and beat until frosting is thick.

Makes about 3 cups.
