Street Tacos

Ingredients:

Street Tacos

  • 1 pound flank or skirt steak
  • 12 corn tortillas

Marinade:

  • 3 limes, juiced (if your limes are not juicy, add another one)
  • 1 orange, juiced
  • 1/4 cup olive oil
  • 6 cloves garlic, minced
  • 1/2 jalapeño, finely chopped
  • 1 teaspoon cumin
  • 1/2 teaspoon chile powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup chopped fresh cilantro (about a large handful)

Garnishes:

  • Chopped cilantro
  • Diced white onions
  • Lime wedges
  • Avocado slices
  • Pico de gallo, optional
  • Crumbled or shredded cheese, optional

Directions:

  1. In a small bowl, combine marinade ingredients and mix well.
  2. Put steak and marinade in zip lock bag and let steak marinate for a few hours.
  3. Remove steak from marinade.
  4. Grill steak to desired doneness.
  5. Remove from grill and let steak rest for 5 minutes, then slice against grain into thin strips.
  6. Fill warmed corn tortillas (use two per taco) with some steak, top with garnishes; cilantro, onions, avocados and squeeze of lime.

Serves 3.

Tip: Remove vein and seeds from jalapeño to adjust heat level.
