Strawberry Spinach Salad

Ingredients:

Strawberry Spinach Salad

  • 2 tablespoons melted butter
  • 1/2 cup pecans, sliced
  • 1/4 cup brown sugar
  • 1 (8 ounce) bag of spinach
  • 1 pint strawberries, rinsed and sliced

Dressing:

  • 1/2 cup sugar
  • 1/4 cup chopped red onion
  • 1 teaspoon dry mustard
  • 1 teaspoon poppy seed
  • 1/2 teaspoon salt
  • 1/3 cup red wine vinegar
  • 1/2 cup oil

Directions:

  1. Heat oven to 350°F.
  2. In a small bowl, mix butter, pecans and brown sugar.
  3. Place on a cookie sheet and bake for 8 minutes.
  4. In a small bowl, mix all salad dressing ingredients together.
  5. In a large bowl, layer spinach, strawberries and pecans.
  6. Mix in dressing right before serving.

Serves 5.

Tip: Young spinach plants are good for salads, they are thinner and have a flexible stems.
