Strawberry Sour Cream Dessert

Ingredients:

Strawberry Sour Cream Dessert

Crust:

  • 2 cups flour
  • 1/4 cup powdered sugar
  • 1 cup butter or Smart Balance 50/50 Butter Blend (stick form)
  • 1 cup chopped pecans or macadamia nuts, toasted (optional)

Filling:

  • 3 cups light sour cream
  • 1 tablespoon sugar
  • 2 small boxes (4-serving size each) instant vanilla pudding and pie filling
  • 1 container (16 ounces) frozen sweetened strawberries, thawed
  • 1/2 pound fresh strawberries, sliced

Topping:

  • 1 container (8 ounces) frozen light whipped topping (such as Cool Whip), thawed
  • 1/2 cups chopped pecans or macadamia nuts, toasted (optional)
  • 1/2 pound fresh strawberries, sliced

Directions:

Crust:

  1. Preheat oven to 375°F.
  2. In a large mixing bowl, mix together the flour and sugar.
  3. Cut butter into flour mixture until it looks like coarse crumbs.
  4. Gently mix in the nuts.
  5. Pour the crumbly mixture into a 13 x 9 x 2-inch pan, shake to distribute crumbs evenly; very lightly press the crumbs down.
  6. Bake for 20 minutes or until golden brown; cool.

Filling:

  1. In a large mixing bowl, mix together the sour cream, sugar, pudding mix, and thawed strawberries.
  2. Gently fold in the fresh strawberries.
  3. Pour filling onto cooled crust; chill for 15 minutes.

Topping:

  1. Spread whipped topping onto second layer.
  2. Sprinkle nuts over whipped topping and lay strawberries on top.

Makes 20 servings.

This recipe is so delicious. Every time I make it for a gathering it is the talk of the party and I'm always asked to make it again and again. A great dessert hit no doubt!!!
