Spicy Chinese Chicken Salad Dressing
- 1/2 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 teaspoon salt
- 6 tablespoons vegetable oil
- 4 scallions (green onions), chopped
- 1-inch piece fresh ginger, minced or grated
- 1/2 teaspoon crushed red pepper

In a small bowl, combine soy sauce, honey, garlic, and salt; let stand for 5 minutes. In a small saucepan over low heat, heat salad oil, scallions, ginger and red pepper for 3 minutes. Combine both mixtures; mix well. Makes about 1 1/4 cups.
Serving suggestion: Serve with shredded lettuce and cooked, shredded chicken; top with fried won ton pi chips and chopped toasted almonds.
