Spicy Ahi Tuna Cucumber Cups

Ingredients:

Spicy Ahi Tuna Cucumber Cups

  • 3 Japanese cucumbers, peeled and cut into 1-inch
  • 1 pound spicy ahi tuna (found at most supermarkets)
  • Sesame seeds, toasted (for garnish)

Directions:

  1. Wash, dry and peel cucumbers.
  2. Cut the cucumber crosswise into 1½ -inch pieces; using a small melon baller or spoon, form cucumber cups by scooping out the flesh and seeds.
  3. Leave 1/2-inch of flesh in the base of each cup and 1/4-inch of flesh around the perimeter.
  4. Distribute spicy tuna among the cucumber cups.
  5. Garnish with sesame seeds and serve.

Makes 12 servings.
