Soy Sauce Chicken

Ingredients:

Soy Sauce Chicken

  • 1/2 cup cider vinegar
  • 1/4 cup brown sugar
  • 1 1/4 cups water
  • 1 tablespoon minced ginger root
  • 1 1/2 teaspoons minced garlic
  • 5 pounds chicken pieces
  • 1/4 cup cornstarch

Directions:

  1. In a large bowl, combine soy sauce, vinegar, sugar, 1 cup of the water, the ginger and garlic.
  2. Marinate chicken in mixture for at least 2 hours or overnight in a large, non-reactive sauce pot.
  3. Bring to a boil and simmer for about 40 minutes or until chicken is tender.
  4. Combine cornstarch and the remaining 1/4 cup water; stir into chicken mixture.
  5. Cook until mixture thickens.

Makes 8 to 10 servings.
