Simple Parmesan Meatballs

Ingredients:

Simple Parmesan Meatballs

  • 1 pound ground beef
  • 1 pound ground pork
  • 2 eggs
  • 1/4 water
  • 1 small onion, diced
  • 1 1/3 cups panko
  • 1 cup grated Parmesan cheese, divided
  • 2 garlic cloves, minced
  • 2 teaspoons Italian seasoning
  • 1 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 1/8 cup spinach, finely chopped

Directions:

  1. Heat oven to 375°F.
  2. Line a baking sheet with parchment paper; set aside.
  3. In a large bowl, combine 2/3 cup Parmesan cheese and all other ingredients; mix well.
  4. Shape into 1 1/2 inch balls.
  5. Roll meatballs in remaining Parmesan cheese.
  6. Bake uncovered for 15-18 minutes or until no longer pink.

Makes 30 meatballs.
