Simple and Tasty Orzo Pasta Salad

Ingredients:

Simple and Tasty Orzo Pasta Salad

  • 1 package (1 pound) orzo pasta
  • 4 cloves garlic, minced
  • 1/4 cup lemon juice
  • 4 teaspoons olive oil
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 small can (3.8 ounces) sliced olives, drained
  • 1/2 cup grated Parmesan cheese (preferably fresh-grated)
  • 2 tomatoes, diced
  • 1/2 cup finely sliced fresh sweet basil

Directions:

Cook orzo pasta according to package directions; drain. In a small bowl, mix together the garlic, lemon juice, olive oil, salt, and pepper; pour dressing over orzo. Add olives, cheese, tomato, and basil; toss and serve salad warm or cold. Makes 8 servings.
