Shrimp Toast

Shrimp Toast

  • 1 pound shrimp, cleaned, shelled and finely chopped
  • 1 egg, beaten
  • 1/2 teaspoon sugar
  • 1 teaspoon oyster sauce
  • 1 stalk green onion, chopped
  • 1 teaspoon cornstarch
  • 1 teaspoon shoyu
  • 1/4 teaspoon salt
  • 2 stalks Chinese parsley, minced
  • 8 slices white sandwich bread, lightly toasted and cut into bite-size pieces
  • Oil for frying


In a deep frying pan, heat oil to 400°F. In a large bowl, combine shrimp, egg, sugar, oyster sauce, green onion, cornstarch, shoyu, salt and parsley. Spread on toast, carefully place in pan mixture side down for about 2 minutes until golden turning once. Serves 6.
