Shrimp Scampi

Shrimp Scampi

  • 2 tablespoons butter or margarine
  • 2 tablespoons olive oil
  • 1/4 cup chopped green onions
  • 4 cloves garlic, minced
  • 1 lb peeled and veined medium shrimp with tails on
  • 1/4 cup lemon juice
  • 1/8 teaspoon salt


In a large skillet, heat butter and oil; sauté onions and garlic. Add shrimp and cook until shrimp are pink. Add lemon juice and salt; heat through. Serve with Penne Pasta with Eggplant and Tomatoes. Makes 4 servings.
