Savory Beef Roast with Mushrooms

  • 4 tablespoons olive oil, divided
  • 3-4 pound rib eye roast, room temperature
  • Salt and freshly ground pepper
  • 1/4 cup chopped fresh rosemary
  • 1/4 cup chopped garlic
  • Salt and freshly ground pepper
  • 4 tablespoons butter divided
  • 4 cups of local mushrooms, sliced
  • 1 cup of beef stock


  1. Preheat oven to 350°F.
  2. Heat two tablespoons of oil on medium-high heat in skillet.
  3. Season beef roast with salt and pepper on all sides.
  4. Move to skillet and sear on each side for about 4 minutes; set aside.
  5. In a small bowl, mix the rosemary and garlic and one tablespoon of oil and one tablespoon of butter.
  6. Rub mixture on all sides.
  7. Place in center of baking pan and bake for about 30 minutes for medium-rare.
  8. In skillet heat up the remaining oil and butter on medium high and add mushrooms; stirring occasionally.
  9. Cook for about 10 minutes and add stock; scraping the bits from the bottom of the skillet.
  10. Simmer until thick.
  11. Slice the roast and serve over mushroom sauce.

Serves 6.
