Samoas Sweet Potatoes

Ingredients:

Samoas Sweet Potatoes

  • 3 pounds yellow sweet potatoes
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon nutmeg
  • 10 tablespoons butter
  • Salt and pepper to taste
  • 1 (7.5-ounce) box Samoas Girl Scout Cookies
  • 1/3 cup mini marshmallows

Directions:

  1. Heat oven to 400°F.
  2. Bake sweet potatoes for 1 hour.
  3. Remove to cool and peel.
  4. Reduce oven temperature to 350°F.
  5. Mash potatoes and add sugar, cinnamon, ginger, nutmeg, and butter.
  6. Season with salt and pepper to taste.
  7. Place mixture in casserole dish and layer with Samoas.
  8. Bake until cookies melt.
  9. Top with mini marshmallows and bake until lightly brown.

Serves 8.
