Royal Icing

Ingredients:

Royal Icing

  • 2 tablespoons meringue powder
  • 1/4 cup water
  • 1/4 teaspoon fresh lemon juice
  • 2 1/3 cups powdered or confectioner's sugar
  • Food coloring

Directions:

  1. In medium bowl, using a hand-held electric mixer, beat meringue powder with water until combined.
  2. Gradually beat in sugar and lemon juice until very stiff, about 3-4 minutes.
  3. Add food coloring.
  4. If you are going to do several colors, divide frosting accordingly and add coloring.
  5. If you do not use the frosting immediately, cover with a damp cloth to prevent drying out.
  6. Make sure to dry decorated cookies in a sealed container overnight.
