Pumpkin Bars

Ingredients:

Pumpkin Bars

  • Non-stick cooking spray
  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 1 egg
  • 1/2 cup canned pumpkin
  • 1 3/4 cups flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon allspice
  • 1/2 cup chopped dates
  • 1/2 cup chopped nuts
  • 1 cup powdered sugar
  • 1 teaspoon grated orange rind
  • 5 teaspoons orange juice

Directions:

  1. Heat oven to 350°F.
  2. Coat a 16x11x1-inch pan with cooking spray.
  3. In an electric mixer, cream butter and sugar.
  4. Add egg and pumpkin; beat well.
  5. In a separate bowl, sift flour with baking soda and spices.
  6. Stir into creamed mixture.
  7. Add dates and nuts; mix well.
  8. Spread in prepared pan.
  9. Bake for 16 to 18 minutes.
  10. Combine remaining ingredients.
  11. Spread over bars while hot.
  12. When completely cool cut into small bars.

Makes 6-1/2 dozen.
