Portuguese Pork Chops

Ingredients:

Portuguese Pork Chops

  • 6 pork chops, cut 1-inch thick
  • 1/2 cup flour
  • 1/4 cup olive oil
  • 3 large tomatoes, diced
  • 1 medium onion, chopped
  • 1 cup sliced fresh mushrooms
  • 2 cloves garlic, minced
  • 1/2 cup sherry
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 green pepper, cut into rings

Directions:

  1. Dredge chops in flour.
  2. In a large skillet, heat oil and fry chops until golden brown on both sides; remove from skillet.
  3. Add tomatoes, onion, mushrooms and garlic; saute for a few minutes.
  4. Add sherry, salt and pepper.
  5. Return chops to skillet and put green pepper rings on chops.
  6. Cover and simmer until chops are tender, about 45 to 50 minutes.

Makes 6 servings.

This dish was both tasty and very tender. After frying the porkchops I finished it off in a slow cooker and it came out great.
